DESCRIPTION:  \nThis Thursday from 11:00 a.m. – 2:00 p.m. we will be offering a house-made strawberry shortbread dessert paired with our weekly barbecue lunch on the patio. Scroll down to preview Chef Gabe’s shortbread biscuit recipe! \n \n  \n  \nINGREDIENTS: \n\n2 cups (248g) all-purpose flour\n2 ½ teaspoons baking powder\n½ teaspoon salt\n2 tablespoon granulated sugar\n1 ½ cups (356ml) heavy whipping cream\n\n  \nINSTRUCTIONS: \n\nPreheat oven to 425°F. Grease a cookie sheet with butter or shortening.\nWhisk flour\, baking powder\, salt and sugar in a large bowl.\nAdd the heavy whipping cream and stir with a wooden spoon or spatula until the dough comes together. It should become a thick dough and if needed\, use your hands to finish working it together.\nUsing two spoons\, scoop out and drop biscuits on prepared cookie sheets. Depending on size\, you’ll get about 8 biscuits\, unless you want them smaller.\nBake for about 14-16 minutes\, or until the tops and bottoms are golden brown and the biscuits are cooked through. I recommend rotating the pan halfway through baking for even cooking. Cool biscuits before serving.

DESCRIPTION:After being diagnosed with breast cancer\, Lisa noted “My first thought was not\, well\, I guess I can’t climb. It was\, well\, I’m going to find a way to do it and still be healthy and not compromise my treatment\,” recalls Thompson. “I was really determined that cancer wasn’t going to steal that dream from me.” \nThat determination led Thompson to make a bold decision: after her treatment\, she would summit Mount Everest. True to her word\, she made it to the top a year later. Her inspiring journey was chronicled in Sports Illustrated’s virtual reality documentary Capturing Everest. \nJoining us at the 10/3 Health Campaign in Lillehammer\, we are excited to host author\, mountaineer\, cancer survivor\, and coach\, Lisa Thompson.  Lisa will be onsite signing compliementary copies of her first book\, Finding Elevation.  She’ll  share personal stories of her ascent of the world’s highest peaks and how staying true to herself allowed her to achieve the daunting challenge of summitting K2\, the world’s most dangerous mountain. \nLisa’s story will inspire you to lead authentically\, pursue your passions\, and effect positive change by staying grounded in your values even during the most challenging of times.
